Hop Bitters

Ingredients

1 oz hops

1 oz bruised ginger

1 Demerara Sugar

1 gallon of boiling water

small amount of fresh yeast

Earthenware jar

Instructions

Put 1 oz of hops into an earthenware pan, add 1 oz of bruised ginger, 1lb of demerara sugar pour in 1 gallon of boiling water and stir in until sugar is dissolved. When cool mix a little fresh yeast with a tablespoonful of warm water. Stir it in and leave till next day. Strain it, bottle and cork, and leave for one week.
