Pomelo or Shaddock Preserve

Ingredients
Fruit
Crystal sugar
Water
Instructions
Scrape the fruit all over with a piece of glass, scald the fruit for 20 minutes, cut into pieces and carefully remove the pips. Weigh and put into a clean pan and for each 3oz. of fruit put 1/2 pint of clean, coid water and boil gently until soft - about an hour. Remove from fire, and to each pound thus cooked fruit and water add 2lb. crystal sugar. Put on fire and boil slowly till done.
